Sparkenhoe Red Leicester: 'Sparkenhoe' is made in a totally authentic way using the farm's unpasteurised milk. The milk from the previous day's milking is pumped across from the parlour, an old recipe discovered is then followed. Annatto is then added to give the cheese its rich orange colour. The flavours are rich, nutty, sweet, wholesome and milky. It is a complex and intriguing flavour but at the same time balanced and smooth.
