A gorgeous little lactic set, Geotrichum ripened sheep's cheese.

A light and delicate, ice-cream-like texture develops into a rich and fatty breakdown below the tender rind. The flavours are sweet, sheepy and almondy, with a robust farmyard aroma. We love it!!
