Ashcombe is a new cheese made by David Jowett of King Stone Dairy at Manor Farm, Chedworth. Ashcombe is based on Morbier with a horizontal line of wood ash through the paste. Rich, milky, gentle flavours, reminding us of fresh hazelnuts.
A little lactic acidity too, elastic, semi-firm texture softening with age.
Lovely golden colour to the paste from the pasture here in the Cotswolds
Rind is quite mushroom - cellar flavour and aroma.
