Brand new cheese from King Stone Dairy, Bibury is David Jowett's first ewe's milk cheese and we love it!

Bibury is made in the style of a mountain sheep's cheese like the very popular Ossau-Iraty. It has a smooth paste and complex flavours, tastes of hazelnuts, coconut, wildflower and a gentle hint of caramelised lamb fat and a lovely floral note that you would expect from a sheep's milk cheese.
