Jonathan Crump's Double Gloucester is made from the milk pure Gloucester breed cows' at Standish Park farm in Oxlynch near Stonehouse in Gloucestershire. Double Gloucester is a traditional hard cheese, which has been made in Gloucestershire since the 16th century although production in the county had died out by 1950.
The milk in Double Gloucester is taken from both morning and evening milkings giving it a rich, buttery taste and flaky texture. It is firm and bitable and has a fudge-like texture and a sweet, nutty flavour. The colour is bright orange, due to the addition of annatto. It has a natural, slightly mouldy rind and matures for about 3 months.
