A subtle, soft, creamy Gloucestershire cow’s cheese with a distinctive smell.

Stinking by name, but not necessarily by nature… Stinking Bishop is known the world over for its strong smell and distinctive rind, but contrary to common belief, the cheese itself actually has a delicious, delicate flavour. The name “Stinking Bishop” comes from the pear used to make the Perry that the cheese is washed in during the maturing process. Brown/pink and pungent on the outside, creamy, smooth and subtle on the inside, Stinking Bishop really is a cheese that everyone should try at least once in their lifetime. Just make sure you close the fridge door properly when you put it back in!

Stinking Bishop cheese is made by Charles Martell & Son in Dymock, Gloucestershire, using the milk of a specific breed of Gloucester cow. Sadly though, the particular breed is close to extinction. In recent years the rising popularity of Stinking Bishop has seen the number of cows rise, but there is still work to be done. So the next time you’re tucking into some on your cheeseboard, just know that you’re doing your bit to keep the legacy of Gloucester Stinking Bishop alive.

The soft creaminess of Stinking Bishop is perfect for spreading on crunchy biscuits and crackers. Our favourite has to be Fennel Crackers for pungent cheese.
