Shipston Blue is a delicate, creamy blue cheese, with notes of hay, made using milk from  water buffalo. It is matured in caves to add an earthy flavour.

The milk was originally sourced from a herd of buffalo from Shipston on Stour (Hence the local name) Now Carron Lodge have their own herd of 30 water buffalo up in Lancashire, but the cheese has kept its original name which is a great nod to our local area.
