Devon Blue is one of three cheeses made by Ben Harris and his team at Ticklemore Cheese in Totnes, Devon. The dairy initially made a sheep’s milk cheese - Beenleigh Blue, followed by a goat’s milk cheese - Harbourne Blue, then came Devon Blue, a cow’s milk blue cheese.
Devon Blue is made using Friesian cows’ milk collected locally to the dairy in the South Hams.
It has a clean, buttery, rounded depth of flavour.
